Apple Turnovers and Swimming

What do those two things have to do with each other?  Absolutely nothing.  Except that they're the two things I took pictures of today so they're what I'm going to write about.  :) Anna spent the past week in cooking camp (the first of approximately 32 camps the kids are attending this summer) and wanted to practice her newly learned skills on us.  Doc happily bought the ingredients she needed last night at the grocery store and this morning she got up, made her way to the kitchen, and made us a breakfast of apple turnovers.

Her list of ingredients was short and simple:  powdered sugar, apple pie filling, biscuits, and cinnamon sugar.

First step: flatten out each biscuit.

Next, sprinkle generously with cinnamon sugar.

Then, spoon on a few apples and some filling.

And finally, fold the biscuit over in half and pinch the edges together using a fork.

Then do it again and again and again.  Our chef doesn't like apple pie filling so she made a few without it.

We popped them in the oven for a few minutes and they plumped up as they cooked.

And then the very last step was to sprinkle them with powdered sugar.

The chef was pleased with how they turned out and so were we!

I added a few berries to mine before enjoying it out on the patio.

After filling our bellies with the delicious apple turnovers, we went to the farmers market to stock up on some goodies for the week.  As soon as we got back home and unloaded the car, we changed into our swimsuits and headed out to Parker's house to swim.

Doc made a quick entrance into the cold water with a front flip.

Parker jumped in too.

This little boy is a fish!  He jumped off and swam to his mama and then swam to the ladder over and over and over again.  I was worn out just watching him.

Parker does a great job of following the rules.  If his mama's not in the water, he has to wear his safety vest.

Sometimes his uncle would give him a little toss into the water.

Anna watched him below the water with her goggles and snorkel.

After a picnic lunch of Chik-Fil-A out by the pool, we didn't stay much longer.  We wanted to get home early since we heard it was going to be a full moon...

Beach Vacay

Aaaaand we're back! I'm going to have to start thinking of more creative blog titles since we're going to have our own beach house soon and, hopefully, more beach vacays.  Otherwise, this is going to start getting repetitive. As you read from my last post, we hit the road around 1:00 on Wednesday and we just returned yesterday afternoon (Memorial Day).  It was just me, Doc, and my parents on this trip.  Doc found us a nice condo for the trip and, even though it was on the opposite side of the street as the beach, we lucked out that there were no buildings blocking our view of the ocean, just a bunch of trees.  So we enjoyed this view from our living room all weekend.

While the biggest item on the agenda was to relax, we did have a few business items we needed to take care of while we were in town.  We decided to get all of that out of the way early on, so Thursday morning we got up early to meet our builders for breakfast.  You know how you can really tell you're on vacation?  When you go to breakfast on a weekday and get to order a mimosa, even though the people you're eating with have to go to work afterwards.

We had breakfast in Grayton Beach at Another Broken Egg.  My mom suggested the restaurant and then got nervous that we wouldn't like it.  Doc and I both reassured her that it was hard to mess up breakfast but y'all - this place was AMAZING.  Oh my goodness, I think I could eat breakfast there everyday.  I had an eggs benedict that had crab cakes instead of ham and a side of cheese grits.  So delicious.

It was nice to meet with the builders and grill them with questions.  We had hoped to get to see some progress on the house while we were in town, but unfortunately, it was still a lot full of wild brush.  The builders were waiting on a final permit before they could begin clearing it.  Not really what we wanted to hear, but the permit did come in while we were in town and they are going to get started this Wednesday (tomorrow!).  When my brother and his family goes on vacation in a couple of weeks, they should be able to see some good progress.

The builder gave us a list of vendors he likes to use, so after breakfast we set out to visit some of them.  This is my first experience with building a house from scratch and I'm learning quickly how overwhelming it can be!  Our first stop was a floor place that had both hardwood and tile.  Where do you start in a store like that?  Everything looks the same!  Fortunately (or unfortunately?) we're on a strict budget, so we were quickly pointed to the direction of things that fell within price range we're working with.  At least that narrowed our choices down.  We did have to remind ourselves a few times that this is not the house that we'll be living in full time and that other people will be renting it, so it wasn't too hard to wave bye-bye to any super high-end stuff that may have caught our eye.  We managed to fight off the food coma long enough to make preliminary selections on hardwood, tile, carpet, and cabinets.

After that?  Vacation was on like Donkey Kong. We raced back to our condo so we could get changed and catch the last couple of hours of sun down on the beach.

Hello freckles.  Some of those little brown spots I haven't seen since last summer.  It's good to have them back.

The boys had most of their trip planned out.  Tee times for both Saturday and Sunday mornings, and an early fly-fishing trip scheduled for Friday morning.  They were supposed to be outside waiting on their guide a few minutes before 6 am to get going.  Doc was so excited about the trip that he hopped out of bed with no problems.  He headed to the bathroom to get cleaned up, popped in his contacts, got dressed, and then finally looked at the clock: 3:30 am.  A wee bit early.

After a 2-hour nap, Doc got up again and the boys made their way outside to wait for their guide, only to find out that he was having car trouble and couldn't pick them up until 8:00.  Doc got to take his second nap of the day before I had even woken up once!

They did finally make it out on the water, though, and managed to catch around 25 fish between the two of them.  They seemed to have a good time.  Doc snapped this picture of my dad with his phone.

When I asked Doc where the picture of him and a fish was, he responded with, "Your dad didn't offer to take a picture of me."  Gee thanks, Dad.

That night we walked down a couple of blocks to have dinner at La Cocina.

The weather was nice so we decided to eat outside.

At one point I looked up, and I swear it looked like I was having dinner with a character from one of my favorite movies.

Yes, that would be Jim Carrey in Dumb and Dumber.  You better believe we called him Lloyd for the duration of the trip.

The next morning, the guys took the car to the golf course.  Mom and I decided to try out the neighborhood pool since we hadn't been to it yet.  It's the same neighborhood pool that we'll have access to from our house.  We arrived pretty early and were able to get great spots.  The pool area is fantastic!  It's very resort-like, with about five or so pools that all kinda feed into each other from waterfalls.  The area is huge so there's plenty of room for everyone.  I can definitely see us spending a lot more time there, especially when we have kids in tow.

By the time the guys got back that afternoon, we were ready to take the car from them and go shopping.  Man, I love the outlet mall down there!  We left them as they settled in for naps and took our time hitting up every store we wanted.  We got some great deals, especially since it was a holiday weekend.

Before dinner that night, I forced everyone to walk down to the beach to take pictures.  Yes, I was that girl.  We did have someone to offer to take our picture as we were walking that way, so we officially have one (off center) picture that proves we were all on the same vacation together.

We walked through this row of palm trees any time we went to the beach.  Ideally it'd be nice to be beach front, but if we're gonna have to walk, at least it's a pretty walk.

The stairs.  Oh, the stairs.  When headed to the beach, they are your very best friend, the only thing left separating you from the glorious white sand beach and emerald blue ocean.  Those stairs are the pathway to ultimate relaxation.

But then, hours later when it's time to head upstairs to cool off and recover from the sun's hot rays, those stairs become the absolute devil, staring you in the face as you trek across the burning hot stand and then daring you to try to make it up them barefoot and without stopping.  I swear, midway up that climb I wish I could burn those stairs down and never see them again.  They make me question why I even decided to go to the beach and did I really need to lug all that stuff down there with me?

But usually, by the time I've rinsed off my feet under the shower at the top of the stairs, I'm over it.  It's a love-hate relationship with the stairs, is what I'm saying.

Our first round of pictures Saturday night were actually taken on those gosh-awful stairs.

We were losing the sun fast but I still tried to get some shots of the pretty sunset.

I have this problem where I'm always finding cute pictures online that I want to recreate, but then when I find myself in a position where the scenery is pretty and I actually have my camera with me, I can't ever remember any of those cute picture poses.  Does that happen to anyone else?  Since I had already forced everyone down there to take pictures, I felt like I had to do something, so I decided I'd take one of those jump-in-the-air pictures of my Mom and Dad that everyone else always does.

I tried to coach them on it.  Hold hands, always smile and look at me, kick your feet up when you jump.

They decided on this start position all by themselves.  Dad is focused.

1, 2, 3...jump!

And that's what we got, folks.  I don't think anyone is going to be bookmarking any of our beach photos so they can come back and try to replicate them.  I will give my parents props, though, for giving it their best shot.

Maybe it was the sheer determination, maybe he jumped the gun, I don't know.  All I know is he left Mom in his dust.

I was planning on leaving the jump-in-the-air pictures at that, but I can already hear what my mom will say if I post these pictures of her without any of myself.  In order to be fair, here's the best one of me and Doc - the one that looks like we barely got off the ground and my elbow doubles as a weapon.

By this time, Dad was done taking pictures.  He'd had enough.  He told me to put the camera down and that we were headed that way...

We walked down the beach to Rosemary (their stairs have a ramp!) and chose Cowgirl Kitchen as our dinner spot.  The tables were all full so ate at the bar.  There, we learned nutrition facts.

Man, the food there was good too.  Doc and I each had a pizza and my parents had the meatloaf.  Their meatloaf came with a side of mac and cheese that I could've eaten a whole plate of.  It was tasty!

Sunday - our last full day of vacation - Mom and I chose the beach over the pool.  This time the boys met us down there after their golf game, and they even brought us lunch!

Doc seems to have one to match it.  What is it with guys not applying SPF?

In all fairness, I teased them about their sunburns because they looked so bad, but I'm the one who ended up sick.  I spent about 24 hours feeling like garbage thanks to the burn I got on the first day.

That afternoon we made a quick return trip to the outlet mall to hit just a couple stores, and then went to Baytowne Wharf for dinner.  Doc and I had been there before, but this was the first time in peak season when everything was open.  There is so much to do, especially for kids!  I highly recommend it anytime you're in the area.

Doc and I have a picture taken in almost this exact same spot from 2007.  We were with the Kinsers and they get credit for introducing us to Baytowne.

This real statue lady reminded me of New Orleans.  I didn't even realize she was a real person until I was snapping the picture.

We ate at a place called Acme that served New Orleans style po' boys.  It was pretty good, but the best part was that the candy store was directly across the street.  I watched people walk out of it eating chocolate throughout our whole meal so I couldn't really focus on my sandwich.  I didn't have to twist anyone's arm to go there for dessert.

We spent a few minutes watching these boats in the bay.  You could pay to operate them from the dock.

Right over the bay is a zipline so people of all ages were zipping above us.  They also had a high ropes course that I really wanted to do.  Next time I go to Baytowne, I will not wear a dress.

Mom and I were the ultimate tourists when we climbed up in the giant adirondack chair for a picture.  It's awkward having your picture made when there's a line of people waiting for you to move so they can climb up there.

We did a little window shopping and ended up convincing my dad to come in one shop and try on a pair of Sanuks.  Mom, Doc, and I all already own a pair of these shoes and they are the most comfortable shoes ever!  (Don't tell anyone at TOMS that I said that, because I really love their shoes too and especially their mission, but Sanuks take the cake when it comes to comfort.  I know, I didn't think it was possible to beat out TOMS either.)

Not only did Dad try on a pair, but he instantly fell in love and bought them!  That's big time for him.  We made him sit on a bench and put them on right away.  Dad's stylin' now!

We made it back to our condo that night just in time for a Memorial Day fireworks show.  We had no idea it was even happening, but it ended up being right across the street from us.  We had front row seats right on our balcony.

The fireworks were the perfect finale for our vacation.

A couple other things from our vacay:

  • At my mom's suggestion, the first book I read was Heaven Is For Real by Todd Burpo with Lynn Vincent.  It's about a little boy who dies and goes to heaven and his experiences there.  I know, sounds hokey, but it really isn't.  The story's told by his dad, a pastor, and isn't a cheesy, let's-cry-it-out message at all.  It's a quick, easy read.  Definitely recommended.
  • Mom and I both also had The Lincoln Lawyer by Michael Connelly downloaded on our kindles, and raced through reading it.  It's a John Grisham type of book and is pretty entertaining.  I loved it and can't wait to see the movie now.
  • Somehow the tv ended up the history channel one night and we ended up watching hours of Swamp People.  It's a reality show about people in Louisiana that hunt and kill alligators as their living.  The stars are backwoods country folk who probably have no clue things like blogs even exist, but the show is like a train wreck in that you can't look away.  It's fascinating to watch.  These people really live this way!  Seriously, give it a try.  Once you hear Troy yell "Shood 'em, Lizzabeth!" you won't be able to turn away.

Champs All Around

I've had a couple of lousy days this week and haven't felt like blogging much, but I did want to get some pictures posted from this past weekend.  Doc's parents were in town and I'm ashamed to say that I did not do a good job of taking pictures at all.  In fact, I only got my camera out once the whole time they were here.  We had a great weekend, though, and enjoyed having them here with us.  I wish they could be here more often. Over the course of their visit, we did lots of eating, playing cards, walking the neighborhood, watching the Grizzlies, playing outside, and just generally having a good time.  Saturday morning Doc had his final tennis match of the season.  I had some business to tend to out of town so I didn't get to go watch, but everyone else did and said he did a really great job.  He played doubles this week with his team captain.  Lala was able to snap a few pics for me.

Doc and his partner won 6-3, 6-2 and his teammates all won their matches, too, making their team first place in their league!  So exciting!  This means they will play in the state tournament at the end of June.  Luckily the state tourney is in our city this year so we won't have to travel.  I just hope it's not too hot!  First place champs - not bad for Doc's first year to play in this league.

Here are the only pictures I took over the weekend - everyone dressed and ready for church Sunday morning.

The kids have both recently taken entrance exams to get into a new school for next year.  They both did well on their tests and have been accepted into the school.  We are, of course, very proud.  They are our champs.

While I have not been able to shake out of my funk lately, I was able to take out a little frustration on the volleyball tonight.  Doc and I play on a co-ed team in a church volleyball league.  Tonight was our tournament.  We played our first match at 6 and were victorious, which put us in the championship game at 8:00.  We lost our first game in the finals, but came back strong in the second game and ended up winning it all.  After several years playing in this league, we are so glad to finally be the champs!

There is no state tournament for us to play in, or even a trophy to take home, but that's ok.  Tonight, we were winners, and that's all that matters.

Jett's Backyard Birthday Bash

In case you're unaware, for our family, the month of May rivals December for having the most birthdays and events.  A couple weekends ago we celebrated my brother Ben's birthday and this past weekend was Jett's birthday party.  We'll party for my other brother tomorrow night.  Add that to mine and Doc's anniversary that was yesterday and my parents' that's in a couple weeks and we've got ourselves a busy month! So, like I said, this past weekend was Jett's birthday party and let me tell you, it was the ULTIMATE party.  His parents have a friend that rents out those huge inflatable bounce house things so they rented a couple for the event.  They were ginormous!  My parents offered their yard for the party since they have the swingset too.  Beth asked me to be the official photographer for the event, which made me very nervous.  I was scared I wouldn't get any good shots so I went a little overboard and took over 500 pictures.  Don't worry, I won't show you ALL of them, just the really cute ones.

As with any other party, let's start with the details.  Beth did a really good job with the theme.  It was a Soccer Cup birthday theme and everything coordinated.  This sign welcomed you to the backyard.

Beside the sign was Jett's soccer goal.  Beth said it was a complete after thought and she grabbed it at the last minute.  It ended up being a big hit, though.  Jett spent the majority of the time over in the side yard kicking goals with his buddies.

Right inside the backyard was this Donation Stand.  Jett's invitation asked that in lieu of gifts, each guest bring $1 to give to either our church's Hope For The Holidays, Japan, or St. Jude.

Also on the donation table was a basket full of favors.

I thought this sign in Jett's handwriting was so sweet.  Since when is he old enough to know how to write?!?

Speaking of Jett being old, I asked him how "many" he'd be this year.

SIX years old!  I can hardly believe it.  I feel like he should still be a tiny baby.  This means that I've been an aunt for six years - definitely my favorite job yet.

Since I'm still working with just one camera lens (my zoom one is in the shop) I had to go upstairs and take a picture out the window to get a full shot of the inflatables.  This one is a bounce house.

And this is the giant slide.

Because the weather was a little rainy, the food and cake table had to be set up inside the wood shop.  The birthday cake and cupcakes were soccer themed, of course.

Beth also made a couple of giant party hats covered in pictures of Jett playing soccer.  Doc modeled one for me.

I think that sums up most of the details.  We were able to snap a few quick pictures before the guests started to arrive.  Here's one of the birthday boy and his family.

Parker was at the party sans parents, so we all took turns looking after him.  This picture of him and Doc cracks me up.  He was too preoccupied to smile for the camera.

Finally, the first guest arrived!  He headed straight for the donation table to drop off his gift.

Things got crazy from there!  In a matter of minutes the whole backyard was full of kids and parents.  It felt like the whole town was there!  I'll refrain from posting all the pictures of cute kids since even I don't know who half of them are.

Parker was mesmorized by the bigger boys.  He just stood and watched.

Like I said earlier, Jett spent a lot of time playing soccer.  I stood taking pictures for about five minutes and I've never heard the rules to the game change so many times in such a short period of time!  Also, notice Parker (in purple) still just watching.

After a while we rounded everyone up to sing and eat birthday cake.  Can't you just see the "recess smell" in this picture?

Mom grabbed her a piece of strawberry cake and headed out to the swingset to eat it away from all the excited kids.  It seems as though some things, like sitting down on a swing while holding a piece of cake, get a little harder to do the older you get.  This is mom's cake after she dumped it right into the mulch.  I so wish I had an action shot!

Parker and Bren spent some time swinging, like they always do at Mimi and Poppy's house.

About halfway through the party I looked over and noticed Jett sitting all by himself.  He said his tummy hurt.

My mom followed me over and we spent a few minutes cheering him up.

Mom coached him on some fun faces to make.  This is his "It's my birthday!" face.

We sent him on his way to go play with his friends.  I wandered inside to look for Doc.  It had been a while since I had seen him.  Hmmm...

Busted.  Guess he can't handle a bunch of screaming kindergartners.  Taylor was on the other couch keeping him company.

Poor girl.  She had to stay locked inside during the whole party.  She was practically drooling at the mouth wanting to get out there.  It's like she could smell all the kids!  We did decide that if the party started running long we could just unleash her and that'd probably clear everyone out pretty fast.

Back to the party.  Bren and I climbed into the fort and played telephone.

With all the toys in the backyard, we never expected the hammock to be so popular.  We should've known given how many little boys were there.

Sadly, the hammock stand didn't survive the party.  Anybody know how to weld?

Parker finally warmed up and decided he loved the bounce house.  It was perfect for all the little brothers and cousins that came.

Parker also got brave and climbed up to the top of the big slide, but then wouldn't slide down by himself.  Enter Mimi.

Up she went (right behind Bren)...

...and down they all three came!

She survived!  I guess grandparents really will do anything for their grandkids.

Not to be outdone by his wife, Poppy decided to give it a go.  Is he having second thoughts on his way up?

And down he comes!

Now, at this point in the afternoon, I hadn't even been up the slide for myself yet.  I was too busy taking pictures.  But if my parents could slide down and survive, then surely I could too.

Y'all, the picture below shows why I'm never asked to babysit.

That's right.  I took a no-relation-to-me two-year-old down head first.  See the look on my face?  I seriously thought I was probably killing him.

Here's what happened.  I started climbing up the stairs and Jack, the victim, wanted to go up too.  His dad passed him up to me and I helped him up the stairs.  He immediately sat down at the top.

But then he didn't slide down.  "You want me to go with him?" I yelled down to his dad.  Note the rubber shoes on his feet.

So I sat down next to Jack and Parker plopped down on the other side.  I wrapped my arms around each of them but before I could really get ready, Parker (a pro by this time) pushed off the edge.  Let me tell you something here, once you start going down the slide, there. is. no. stopping.  Parker started pulling me down but Jack didn't go anywhere.  Remember his rubber shoes?  They wouldn't slide.  So as I started going down with Parker, I never let go of Jack and ended up yanking him down head first.  And his dad was at the bottom watching the whole thing.

You've been warned.  Never leave your precious children under my supervision, I may try to kill them.

All kidding aside, Jack was fine and thought it was so fun.  I, on the other hand, have some serious burns on my heels from digging them in and trying to brake.

See?  Jack even went again with his dad and brothers (and Jett).  He's the little one throwing up the fist pump.

I did climb back up to go with Parker again and this time, to hopefully enjoy it.  At the last minute, Jett jumped on top of both of us, making us weigh more and thus go faster.  The look on my face tells me I didn't enjoy that one either.

Once the last guest left and our hosting duties were over, it became a family free-for-all on the slide.

Jett and his daddy raced back up the slide instead of using the stairs.  The first time they went up, Jett grabbed his dad's let for support but ended up sweeping his foot out from under him, making his dad face plant and slide back down.  I wish I had THAT picture!

Parker finally went down by himself!

My dad burned both of his elbows on his first trip down.  He was determined not to let that happen again!

After the slide and bounce house were deflated and taken away, Jett got to open his presents from all of us.  He got this cool electric scooter from his mom and dad.

He was too scared to ride it by himself after falling the first time.  I found some bandaids to patch him up and make him feel better.

If these pictures don't make you want to come through the computer and give him a big hug and kiss, I don't know what will.

Luckily, opening the present from us (a nerf bow and arrow) cheered him up.  I wish everyone would make this face when opening presents from me.

I'm excited about the two-lane slip and slide he opened.  I see some races in our future!

Most of his friends brought their dollar donation in a card, so he still had all of those to open up too.

Can I just say that I'd like for all of his friends to be invited to my birthday party because they made him the sweetest cards!

"You are nice and a swieet boy."

If the card didn't specify which charity Jett got to decide.  He did a great job of dividing it up evenly.

After all the cards were opened and the money was divided between the three cans, we totaled them up.  For his 6th birthday, Jett raised $18 for Japan, $40 for Hope for the Holidays, and $45 for St. Jude.  I am so proud of him!

I'm pretty sure we all slept really good that night after all the fun we had.  Rumor has it that the big inflatable slide has a pool that can attach to it so you slide down into the water.  Fourth of July party, anyone?

Celebrating Two Years

I can't believe it's been two years since we got married!  Sometimes I feel like it just happened yesterday, and other times I feel like Doc and I have always been married.  May 9, 2009 was one of the best nights of my life, and I often wish I could go back and do it all over again.  Yes, I would take the stress of pouring rain, a hair dresser that showed up an hour late, and seeing those flowers (oh, those horrible, horrible flowers) for the first time all over again if it meant I could relive the party we had that night!

Doc came home with a bouquet of white roses today.

He actually comes home with flowers pretty regularly.  He really is so sweet to me.

We exchanged gifts today too.  First, can I brag about my husband's awesome wrapping job?  Check it out!

Didn't he do a great job?  Heart paper, stacked boxes, and curling ribbon!  I am so proud.  I thought it was so pretty I almost didn't want to open it.

Almost.  I admired it for a minute but then I tore into those boxes.  My hubs followed the traditional wedding gift theme of giving something cotton for the second year.  I opened two pairs of soft cotton jammies that I'm excited to have for our upcoming vacation.

I, on the other hand, did not do a very good job of making Doc's gift look pretty.  My wrapping consisted of throwing a black garbage bag over it before present it to him.  Sad.

In my defense, it was a pretty odd shape and I didn't know how to wrap it.  I gave Doc this cool fan for his office.

Doc spends about 2-3 hours of every work day on conference calls.  He has to close the door to have these calls and since his office doesn't have an air conditioning vent, he's usually hot and suffocating by the time he can finally open his door back up.  This fan should help cool him off and keep him from sweating through his cotton shirts.  (See what I did there?  Cotton gift - bam!) Plus, hopefully he'll think of me every time he feels that cool oscillating breeze.

We had a wonderful dinner at Flight to celebrate tonight.  I'm so full I'm surprised I made it through this whole post before slipping into a food coma.
